Recipe: Celeriac and Apple Slaw

Ingredients:

4 cups water
3 tbsp lemon juice
1 celeriac, peeled and grated
2 tart apples, cored, peeled, and grated (or cut into strips)
1/2 cup walnuts, chopped 
3 tbsp white wine vinegar
3 tbsp mayonnaise 
1 tbsp cream
2 tsp dijon mustard
1 1/2 tsp dried basil
1/2 tsp freshly ground black pepper
salt to taste

Directions: 

Combine the water and lemon juice in large bowl.

Add the apple and celeriac to the bowl and let stand for 15 mins. During this time, toast the walnuts and let dry.

Drain the celeriac and apples, return them to a large bowl, and add the vinegar. Toss it all together.

In a separate bowl, combine the mayonnaise, cream, mustard, basil, salt, and pepper. Pour the mixture over the celeriac and apples. Toss to coat.

Add the walnuts and toss again.

Chill before serving.
